Bedale Schools/寿司ワークショップ

I was invited to hold sushi-making sessions at Bedale Schools in Petersfield.  

The school celebrates the educational principles of Founder John Badley through an annual event the “Badley Celebration Weekend”. Students and parents participate in a range of events and celebrations. A variety of workshops such as poetry, Chinese calligraphy, flamenco, yoga, T’ai Chi, Bollywood dancing, Capoeira, pulitzar journalist, origami, Japanese taster, Venetian Masks, cooking paella, pizza making etc. were offered under ‘Language and Skills’, ‘Private Study/Film’, Arts/Culture/Cooking’, ‘Music and movement’ and ‘Global Awareness’. 

My sushi-making workshop was the most popular, according to the teachers, and fully booked. 90 students aged from 13 to 18 years old participated in 6 workshops over the weekend.


ピーターズフィールドにあるBedale Schoolsに招待頂き、お寿司作りのワークショップを開催しました。Bedale Schoolsは自由でクリエイティな校風が特徴で、芸術・芸能分野で活躍する人たちを多く輩出しています。また、その著名人のご子息の多くも学ばれています(例えば、ミック・ジャガーの息子さんも卒業生です。)

Autumn Equinox Day & ohagi/秋分の日&おはぎ

Autumn Equinox Day is around 23rd September (today 23rd, this year), and the day is the middle of higan (a week-long Buddhist ceremony celebrated in Japan).  People clean family Buddhist altar, serve flower and water, invite Buddhist monks to read a sutra, and visit and clean family graves. This is the same with Spring Equinox Day and higan in March.  Buddhism teaches how to reach from shigan (this world, the agonies of life) to higan (the other world, nirvana). It’s said that rituals are held on Spring and Autumn Equinox Day when day and night are equally long, because Buddhism values middle of the road.  

People prepare for bota-mochi/ohagi for the day. Bota-mochi is for spring and ohagi is for autumn, because of the seasonal flower/plant; botan (tree peony) and hagi/ (bush clover). Some says koshi-an (sweet smooth bean paste) for bota-mochi and tsubu-an for ohagi. There’s no clear distinction between bota-mochi and ohagi.

New lesson at Newlnys Cookery School/提携校での新レッスン

My new Japanese cooking course started at Newlyns Cookery School in Hook. It was five-hour intensive lesson, starting with my demonstration and my students’ hands-on afterwards.
I was touched that they clapped in ending the lesson. Clap and cheer for them!

パートナーのクッキングスクールNewlyns Cookery Schoolで、新しい日本食のレッスンが始まりました。飯物、汁物、主菜、副菜、デザートを作る5時間の集中レッスンです。イギリス、とくに、ロンドン以外の場所では、和食の普及はまだまだですが、お寿司以外のレッスンでも、意外と人が集まるのは嬉しいことです。

Private chef/プライベートシェフ

I was hired as a private chef for a family gathering. The party was 17 people, including some vegetarians.  

Menu was thoroughly discussed with the host.  

- Steamed green beans with walnut sauce 

- Fried aubergines and tomatoes marinated in sweet miso 

- Crunchy salad with dried mouli with Japanese mustard dressing 

- Sushi assortment (150 pieces of nigiri, maki and gunkan) 

- Tofu steak with mixed Japanese mushrooms sauce 

- Fried chicken roll with marinated carrots and Japanese oba herb 

- Tofu cake with mixed summer berry coulis

- 鞘隠元の胡桃和え 

- 茄子とトマトの胡麻味噌和え 

- 切り干し大根のポリポ和辛子ドレッシングサラダ 

- お寿司盛り合わせ(握り、巻き、軍艦、150個) 

- 豆腐ステーキ マッシュルーム(椎茸、しめじ、エリンギ、えのき)ソース 

- 塩麹人参と大葉を巻いたチキンロール  

- レア豆腐ケーキ ミックスベリーソース添え

Jugoya (chushu no meigetsu) and tsukimi-dango/十五夜(中秋の名月)と月見団子

15th August on the old calendar is the day when the most beautiful full moon of the year, with perfect round shape, is observed. The day is called jugoya (literally, the night on 15th) or chushu no meigetsu (literally, the best moon in the mid autumn). Autumn on the old calendar is from July to September and August is midst of autumn, therefore, it’s called “chushu (mid autumn) “. It’s also an opportunity to show gratitude, prior to the autumn harvest season. The new calendar is adopted in modern days, and jugoya is about the full moon that can be observed between 7th September and 8th October. It falls on 8th September this year.

What’s prepared for this day is tsukimi-dango (dumplings), and it’s offered with Japanese pampas grass. Potatoes are also offered, as it’s the harvest season.

旧暦の815日が十五夜(中秋の名月)です。このように呼ばれるようになったのは、旧暦では、7月から9月が秋、8月はその秋の真ん中の月、そして15日の夜に出る満月だからです。新暦を使う現代では、97日~108日の間に出る満月をいい、今年は9月8日がその日です。秋の収穫期を前にした感謝を表す機会でもあったようです。 行事食は、月見団子で、ススキと一緒にお供えするのが一般的です。また、9月は芋の収穫期なので、芋もお供えします。
